पालक पनीर का नाम सुनते ही लोगों के मुंह में पानी आ जाता है क्योंकि यह सब्जी बहुत ही स्वादिष्ट होने केसाथ ही पौष्टिक भी होती है। रेस्टोरेंट की तरह पालक पनीर बनाने के लिए पनीर को हल्का सा फ्राई करके पालक की ग्रेवी में मसालों के साथ डाला जाता है और सब्जी को क्रीमी बनाने के लिए उसमें मलाई भी डाली जाती है।

- 2 कली लहसुन,पीस ले
- 2 हरी मिर्च, काट ले
- 1प्याज,बारीक काट ले

- 2 इंच अदरक, पीस ले
- ¼ छोटा चमच्च दालचीनी पाउडर
- ¼ छोटा चमच्च हल्दी पाउडर
- 1 छोटा चमच्च गरम मसाला पाउडर
- ½ छोटा चमच्च जीरा
- 1 छोटा चमच्च जीरा पाउडर
- 2 बड़े चमच्च क्रीम
- 1 छोटाचम्मच नींबू का रस
- 1 छोटा चम्मच कस्तूरी मेथी
- 1 बड़ा चम्मच मक्खन
- नमक स्वाद अनुसार
पालक पनीर बनाने की विधि
- सबसे पहले पालकमें लगी मिट्टी को पानी से अच्छी तरह धोकर साफ कर ले,और फिर पालक को ब्लान्च करने के लिए 2 मिनट गर्म पानी में पकाएं।
- इसके बाद पके हुए पालक को छलनी से छान लीजिए और उसे एक बार ठंडे पानी से धो लीजिए।
- अब उबले हुए पालक को हरी मिर्च,अदरक और ¼कप पानी के साथ मिक्सी में पीसकर उसका पेस्ट बना लीजिए।
- कढ़ाई में घी डालकर गर्म करें और फिर उसमें कटे हुए पनीर को धीमी आंच में हल्का ब्राउन होने तक तलें।इसके बाद पनीर को निकाल ले यदि घी ज्यादा हो तो नैपकिन में सोखने के लिए रख दें।
- अब एक दूसरे का कढ़ाई गर्म करके मक्खन डालें और फिर उसमें जीरा अदरक लहसुन और बारीक कटे हुए प्याज को भूरा होने तक धीमी आंच में पकाएं, इसके बाद इसमें पिसा हुआ टमाटर डालकर उसे भी 15 सेकंड तक पकाएं।
- इसके बाद पिसी हुई पालक, गरम मसाला, जीरा पाउडर, दालचीनी पाउडर और स्वाद अनुसार नमक डालकर पकाएं।
- अब एक कप पानी डालकर उसे उबाल आने तक पकाएं, जब ग्रेवी उबलने लगे तो उसमें पनीर डाल दे और फिर 5 मिनट के लिए पकाएं।
- इसके बाद ताजी मलाई, कस्तूरी मेथी पाउडर और नींबू का रस डालकर अच्छे से मिलाएं और गैस बंद कर दें।
